Garden Sage is a must for the herb enthusiast and regular gardener alike. This member of the mint family is native to the Mediterranean region but has been naturalized in many parts of the world. This old herb has been grown for centuries and was referred to as the 'holy herb' by the Romans. It was renowned for its healing/medicinal properties but also used extensively in culinary dishes throughout the centuries. There is reference to its uses from almost every period of written history. Some uses include but are not limited to, warding off evil, increasing women's fertility, as a diuretic, local anesthetic and much much more. Garden sage is a great addition to many dishes. So much so, that it has been listed for generations in Britain as an essential herb along with parsley, rosemary and thyme. This aromatic herb adds a savory and slightly peppery flavour to any meal.
Sage will perform best in well drained soil and full sun. It is a fairly low maintenance herb that doesn't require a lot of care. Harvest leaves whenever the need arises without defoliating it too much to continue photosynthesis. It is quite drought tolerant once established as well, water when the soil has dried out. Do not over water or over fertilize as that will effect its flavor profile. Garden sage is perennial in zone 4. Start 6-8 weeks before last frost and transplant once the risk of frost has passed. Germination will usually take between 2 and 3 weeks. Matures in 75 days.
