Latin Spinacia oleracea
This beautiful dark green spinach has a uniform growing habit that makes it excellent for baby spinach harvests. It is fast growing and will reach maturity between 25-35 days. It has a good resistance to bolting but it still should be grown in spring and fall to avoid the heat of the summer.
Growing spinach from seed is very easy. Spinach should be direct seeded for best results. It is also important to sow as soon as the ground can be worked effectively. This usually means 3-4 weeks before last frost. Once the soil temperatures become too warm, germination rates will decline. Once the days get longer and the soil temperatures rise, it may start to bolt. Once bolting has occurred spinach leaves will become bitter.
