Latin borago officinalis
Borage, also known as starflower, originates from the Mediterranean region but has naturalized in many other places since its early cultivation. The annual flower remains in many gardens through prolific self-seeding. Traditionally, Borage was utilized for culinary and medicinal uses but now it is mainly used to encourage pollinators or as a compliment to salads. Its cucumber-like flavor and beautiful blue flowers make it a great addition to salads, cocktails or as a garnish. Borage is known to produce copious amounts of nectar which make it a great way to add pollinators to your garden. It blooms all summer long and is highly attractive to bees and other pollinators. All parts of the borage plant, with the exception of the roots, can be used in many culinary dishes. In maturity, borage will be between 2 and 3 feet tall. Planting borage near strawberries has been known to increase yields.
Borage is a very easy plant to grow from seed. Directly sow borage seeds around the last frost of the spring season. Borage does not transplant well so we highly recommend directly sowing. It is not a fussy plant and will grow in many adverse conditions. If you want to avoid self-seeding you must cut flowers before they mature to seed.
